Khaman Dhokla/ Dhokla/ Fluffy & Soft/ Sweat & Sour

 Welcome to my blog friends, in this blog I will share the most popular breakfast and brunch recipe, which is popularly known as Dhokla or Khaman Dhokla, though Khaman is a different recipe made with rice and multiple lentils, but dhokla is also famous as Khaman Dhokla now the days. It is one of the simplest recipes which takes not only less effort but less time too. So presenting Sweat & Sour, Fluffy & Soft, Full of Taste, Dhokla or can say according to trend...Khaman Dhokla.

Khaman Dhokla/ Dhokla

    Ingredients of Khaman Dhokla

     Approximately 4 people

    Gram flour ( Besan): 250gm

    Semolina (Suji): 2 tablespoons, totally optional

    Salt (Namak): 1 teaspoon or as per taste

    Lemon juice: 3 teaspoon

    Turmeric (haldi): a pinch of

    Mustered oil: 1 tablespoon

    Eno fruit salt: 1 packet of 5 gm

    Sugar (Chini): 1 teaspoon

    Ginger& Chilli paste: 1 tablespoon

    Green Chillies: 3

    Curry Leaves: 5 to 6 is enough

    Vinegar: 4 tablespoon

    Water: 1.5 cup

    Preparation of Dhokla batter

     It is just a pouring and steaming recipe so no need to take it hectic for fermentation in the batter of Dhokla. Because it will not consume your time for resting, yes you can cook it just after preparing the batter.

    • Take a middle size bowl and put all the aforesaid ingredients into it except water and eno,. and mix well.
    • Now time to add water into the bowl, carefully pour water by stirring continuously with the help of a whisker, making sure to vanish all the lumps.
    • Its consistency must be a little thick and a little thin, like smooth idli batter.
    • Now at this stage, grease the steamer bowl or microwave bowl, wherever you wish to cook this.
    • Just before pouring the batter into a steamer bowl add a packet of Eno fruit salt and stir well.
    • Thereafter without wasting time transfer the prepared batter into a steamer bowl and on the flame. Let it cook for 15 to 20 minutes on high medium flame.


    • Check if it is cooked, with the help of anything sharp like a knife or spoon, if it's not sticking in the knife that means it's done. if it is still sticking, allow it to cook for  5 minutes more.


    Temper Khaman Dhokla

    Tempering of Dhokla is actually an important process that one should not skip because this process will give the desired mouthwatering flavor and texture to the Dhokla. You can easily have that deliciousness through these steps...

    • Have a big size pan or kadai, I have said for a big one because we are going to soak that whole dhokla into the mixture that we'll make in this big kadai.
     if you don't have a big kadai no need to worry, make the mixture in any regular pan and then place your dhokla on a big plate and pour the entire mixture on the plate.
    • Add a spoonful of refined oil, and let it heat up.

    • Add mustard seed, curry leaves, 3 Green chilies, either whole or sliced in the middle, a spoonful of sugar, and 4 big spoons of vinegar.

    • Let it boil together, once it boiled, off the flame and put your whole dhokla into this liquid.

    • Let it soak for 20 minutes.
    Don't skip this process of soaking, it will delight the texture and taste of Dhokla.
    •  After 20 minutes you will see, all the liquid being soaked by Dhokla, Now it's time to cut your fluffy, yummy, sweaty & sour  Dhokla into cubes. cut it beautifully with the help of a knife.


    You can garnish it with coriander and haldiram bikaneri bhujiya, 

    believe me, you will not feel the need to have any chutney or dipping with this fluffy, soft, full-of-taste recipe but if you like to have dippings for it, the best option might be green dhania chutney or if you like something mild, go for the mayonnaise.
